For Halloween of course I had to bake something. I wanted to make something that would fit into the feeling of the night, but also be tasty. I decided to make Chocolate Beet Cupcakes.

The frosting recipe is from VCTOTW. I know it might be a bit unorthodox to mix vegan and non-vegan recipes in one food creation, but what the heck. It's my kitchen. I wanted to make cream cheese frosting but the lack of cream cheese in my fridge kind of presented a problem. I tried coloring the frosting with some of the water the beets were boiled in, which was a wicked red-orangeish color but didn't really add much. Then I used this natural red food coloring which was also kind of crap. But you get the idea.
For the Halloween effect, the cupcakes are filled with a mixture of the beet puree and granulated sugar. Clever, right?
This is how I transported them. You can see one is missing. I wonder how that happened...?
Well, from here on out it's all holidays, so ready your ovens folks. I am SO excited, as any excuse to cook for someone other than myself is ridiculously thrilling. I am the only vegetarian in my family so it's kind of difficult around the holidays (and none of them like brussels sprouts = sad), but hopefully I will get to help cook a bit. I am also toying around with several ideas for holiday gift items that will probably involve baking or making candy. Yay!!!

how was the insides - beets and sugar? i'm guessing yummy by the missing cupcakes.
you should totally try making something to sneak the brussels sprouts in. like a roasted veggie salad with only a few. maybe they won't notice! or hide them in a shepards pie. ;)
Oh yum! I wasn't craving sweets before, but now... I could sure go for a cupcake piled high with frosting! ;)
I have been wanting to make beet brownies. I need to do that. These look great!
